Easy Sage Roasted Potatoes Recipe

Instead of traditional mashed potatoes, why not do something a little different this Christmas? Try this easy recipe for sage roasted potatoes.

Ingredients:

  • 5 large potatoes, cut into large chunks
  • 1 cup onions, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon sage
  • 3 tablespoons butter, melted
  • 1/2 cup water

Directions:

  1. Preheat your oven at 400 degrees.
  2. Add all of your ingredients to a roasting pan. Toss all items together to mix well.
  3. Cover with foil.
  4. Roast for 55 t0 60 minutes. Stir every 20 minutes.

Easy Mulled Cider Recipe

If you need a holiday hot beverage to put you in the Christmas spirit, try mulled cider. You can make it on your own with this easy mulled cider Christmas recipe.

Ingredients:

  • 5 cups of apple cider
  • 1/4 cup brown sugar, lightly packed
  • 1/4 cup lemon juice
  • 4 whole cloves
  • 1 1/2 inch ginger root
  • 1 1/2 inch cinnamon stick
  • nutmeg
  • cheesecloth or tea strainer

Directions:

  1. Heat the lemon juice, cider and brown sugar in a sauce pan on medium heat until simmering.
  2. Use a small bit of cheesecloth to tie together the ginger root, cinnamon and cloves. Alternatively, you can use tea strainers on your cups. Put this mixture into the simmering pan. Leave in for 15 minutes on low heat. Remove if you are using the cheesecloth.
  3. Pour into mugs. Sprinkle top with nutmeg.

Makes 6 servings.

Easy Holiday Cranberry Sauce Recipe

Cranberry sauce is a staple of both Thanksgiving and Christmas dinner at my family’s house. If you don’t want cranberry sauce from a can, you can easily make your own using fresh cranberries with this Christmas cranberry sauce recipe.

Ingredients:

  • 1 bag of cranberries (12 ounces)
  • 1/4 – 1/2 cup of sugar
  • 1/2 cup of water

Directions:

  1. Bring the water to boil in a saucepan.
  2. Stir the sugar in the boiling water until dissolved. If you want the sauce to be tart, use only 1/4 cup. If you want it to be sweet, use 1/2 cup.
  3. Stir in the fresh cranberries. Turn the heat down to low and put a lid on the pan while they simmer for 6 – 8 minutes. Without a lid, you will have cranberry all over the kitchen as they split open when they get hot. For thicker sauce, let it cook 10 – 12 minutes.
  4. Stir regularly to prevent sticking. Remove from heat to cool once desired consistency reached.

Easy Turkey Gravy Recipe

If you like a little gravy on your Christmas turkey, no need to buy one of those powder packets that you just add water to. Instead, you can easily make your own turkey gravy this Christmas with this easy recipe.

Ingredients:

  • Juices from the turkey roasting pan
  • 1/4 cup of cornstarch
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups turkey or chicken broth

Directions:

  1. Strain the turkey juices from your roasting pan into a bowl. Let it sit for a few minutes so that you can skim and throw out the fat off the surface.
  2. Use a small saucepan to bring the broth and 1 cup of the juices to a boil over medium-low heat. Reduce heat to a simmer.
  3. Mix together the corn starch and 1/4 cup of water with a whisk in a small bowl until there are no clumps.  Then slowly whisk it into the simmering broth.
  4. Cook for one minute before removing from heat and seasoning with salt and pepper.

Easy Holiday Eggnog Recipe

Instead of buying eggnog at the store, why not try making your own for your Christmas party or get together. Here’s an easy recipe to make your own egg nog for Christmas.

Ingredients:

  • 6 eggs
  • 1/4 cup of sugar
  • 4 cups of milk
  • 1/4 tsp. of salt
  • 1 tsp. of vanilla flavoring
  • 3/4 cup bourbon (optional)
  • 1 tsp. nutmeg (optional)
  • 1/3 cup dark rum (optional)

Directions:

  1. Beat together eggs, sugar and salt in a large saucepan.
  2. Stir in only two of the cups of milk.
  3. Cook on your stove over low heat. Stir constantly, making sure to get the corners of the pan so that the egg doesn’t curdle.
  4. Remove from heat when it gets thick enough to coat the spoon.
  5. Slowly add in the bourbon and dark rum.
  6. Then, stir in the remaining milk, nutmeg, and vanilla.
  7. Cover and put in your refrigerator until chilled.

Easy Old Fashioned Sweet Potato Pie Recipe

For a good holiday staple, use this Old Fashioned Sweet Potato Pie recipe to make your Christmas dinner a success.

Ingredients:

  • 2 – 9-inch single pie crusts
  • 2 sticks of butter, softened
  • 3 large sweet potatoes
  • 1 cup sugar
  • 1 cup evaporated milk
  • 2 large eggs
  • 1 tbsp vanilla extract

Directions:

  1. Preheat oven to 350 degrees.
  2. Wash sweet potatoes and boil in a saucepan on the stove until tender, which is when you can easily insert a fork. Drain when done and cover with cold water to cool for 5 minutes.
  3. In a bowl, mix together the butter, sugar, milk, vanilla extract and eggs.
  4. Pull the skin off the sweet potatoes by rubbing it until it breaks so that you can pull it off.
  5. Add the peeled sweet potatoes to your wet mixture in the mixing bowl. Blend together well.
  6. Pour into pie crusts and cook for one hour. Place on wire rack to cool.

Makes 2 pies.

Easy Paradise Cake Recipe

Ingredients:

  • 3 cups of flour
  • 1 teaspoon baking soda
  • 2 cups sugar
  • 1/2 teaspoon of salt
  • 1 teaspoon cinnamon
  • 1 cup chopped almonds
  • 3 eggs
  • 1 1/2 cups vegetable oil
  • 1 teaspoon almond extract
  • 2 cups firm banana, chopped
  • 1 can crushed pineapple, undrained (8 ounce)

Directions:

  1. Preheat oven at 325 degrees. Grease and flour a 10-inch tube pan.
  2. Use a large bowl to mix flour, salt, baking soda, cinnamon and sugar. Once mixed, stir in the almonds.
  3. In another bowl, beat the eggs. Add in the oil, banana, almond extract and pineapple.
  4. Add the wet mixture to the dry mixture. Stir well, but do not beat.
  5. Pour into tube pan and bake for 1 hour and 20 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let stand for 15 minutes once removed from oven before you place it on a wire rack to cool.
  7. Top with cream cheese frosting once it has cooled.

Easy Piña Colada Christmas Cake Recipe

Jazz up your holiday party or Christmas dinner by making this quick and easy Piña Colada Christmas cake. It’s island flavor just might warm you up on that cold Christmas day.

Ingredients:

  • 1 box yellow cake mix
  • 1 can coconut
  • 1 can of sweet condensed milk, such as Eagle Brand milk
  • 1 can of cream of coconut
  • 1 medium carton of whipped topping, such as Cool Whip
  • 1 small can of crushed pinepple

Directions:

  1. Follow the directions on the cake mix box to make your cake.
  2. Punch holes in the top of the cake, once it is out of the oven. Do this while it is still warm. You can use chopsticks to poke the holes.
  3. Mix together the cream of coconut and sweet condensed milk in a bowl. Pour the mixture over the cake.
  4. Pour the can of pineapple over the cake.
  5. Spread whipped topping on exterior of cake.
  6. Sprinkle with can of coconut.

Easy Strawberry Cake Recipe

If you’re getting spice overload from the gingerbread men and pumpkin pie, make a different flavor for Christmas this year. Try this easy recipe for a strawberry cake. It is sure to be a hit at your holiday feast.

Ingredients for cake:

  • 1 box of strawberry gelatin
  • 1 box of white cake mix
  • 3 tablespoons of flour
  • 1 cup of vegetable oil
  • 1/2 cup of water
  • 4 eggs
  • 1/2 sliced strawberries (frozen or fresh)

Ingredients for icing:

  • 1 teaspoon vanilla extract
  • 1 pound box powdered sugar
  • 1/2 cup butter, softened
  • 3 tablespoons of strawberries and juice

Directions:

  1. Preheat oven to 350 degrees.
  2. Grease and flour two 8-inch round pans.
  3. In a large bowl, mix flour, gelatin and white cake mix. Add the eggs, oil and water. Beat well.
  4. Beat in strawberries and pour into the pans.
  5. Bake for 30 to 45 minutes, or until a toothpick inserted in the center comes out clean.
  6. For the icing, slowly mix the powdered sugar into the softened butter. Add the strawberries to soften.
  7. Mix in vanilla. Spread on the cake when cooled completely.
  8. Decorate the cake with fresh sliced strawberries for presentation.
